Got Leftover Chicken? Here Are Some Recipes!

Chicken is a staple main course in my home. A family meal with chicken makes my husband and children happy. What makes me happy is it is still one of the more affordable and versatile meats available. And, there are normally leftovers that can be used in many different ways. Often, the leftovers from a chicken meal do not resemble the first meal and therefore, are not seen with a ‘leftover stigma’ from my family – total win/win in my opinion. Here are a few recipes I have used with my leftover chicken, I hope you enjoy them and share your thoughts – or other recipes – in the comments below.


Chicken Ranch Pizza

  • 1 large Pizza Crust; make your own or buy one
  • 1 cup Ranch dressing; regular, peppercorn ranch or ranch with bacon are all good
  • 2-3 cups of Boneless chicken
  • Mozzarella and/or Cheddar; shredded
  • 4 Scallions
  • 2 medium Tomatoes
  • Oregno and garlic to taste

Preheat the oven to 425°F. Assemble the pizza: crust, ranch dressing, chicken, tomatoes and scallions, and top with cheese. Sprinkle on oregano and garlic to taste. Bake for 20 minutes or until the cheese is melted and turning golden brown.

Chicken and Spinach Club Sandwiches

I’m very lucky that my kids will eat spinach when it is placed in a sandwich. One of my kids will not eat it any other way, so I try and serve up sandwiches using spinach as the green.

  • 1 per sandwich toasted rolls
  • 1 tbsp per sandwich cooked bacon, crumpled
  • Boneless chicken; shredded
  • Provolone cheese; one slice per sandwich
  • 1 slice of tomato
  • Spinach greens
  • Mayo or mustard
  • Salt and pepper to taste

Build the sandwich using the person’s preferences in dressing. I offer different types of mustard – honey or regular – and mayo to my family. Serve with chips and a pickle.

Easy Chicken Stir Fry

Stir Fry leftover chicken recipes

  • One bag frozen stir fry veggies; thawed or 2 cans
  • 2 tablespoons oil; sesame oil or vegetable oil
  • Boneless leftover chicken; shredded
  • 1/4 cup soy sauce; add more if you want more sauce
  • 2 tablespoons of white wine vinegar
  • Salt and pepper to taste

Fry vegetables in the oil until tender. Add chicken, soy sauce and vinegar. Cook for 5 more minutes and serve over rice.
